I received two boxes of cookies courtesy of Green Pea Cookie on monday. Green Pea Cookie is a company that not only shares my love for gif.s, but also specializes in puns and cookies made from, well, green PEAS. Besides tasting like everything a proper cookie should (creamy, crunchy, sweet, salty), they're dairy, soy and preservative free, AND vegan.
They're very much like your atypical green pea cookie - the kind that you see during chinese new year, except WAY healthier and that the flavors are very pea-santly balanced.
The two boxes I got were ofPeater - their original flavor, and Penelopea. The latter is a Christmas special which is studded with bits of cranberry, which is really good, because you can totally have your CNY-esque treat before everyone else.

While the cookies proved to be pea-tty good by themselves, I did have more than enough to eat raw (in cookie form), so I decided to do a recipe.
I came up with a simple mousse based off mysoygurt recipe, which needs minimal ingredients and time. Adding cocoa powder gives the mousse a rich and flavorful taste whilst still remaining silky and light. The crumbled cookies on top not only causes it to resemble a flowerpot (which is why you need to use glass cups), but also contrasts in texture and flavor. Salt + chocolate = definite win.
